Bulk Cooking


I have had two cases of these in the past month.

These were ready to cook.

So a LARGE batch of spaghetti sauce was the answer.
 I will be freezing most of it for later.I have a recipe that makes a large batch that I have used for several years from, "Once a Month Cooking."  Today I doubled it! I have peeled tomatoes for a while today! My daughter's father-in-law  has been so kind a generous us these since he opened his produce and fish market. The last box was shared with neighbors and friends, but these were needing to be cooked right away.

Bulk cooking is hard work for a limited amount of time, but makes things much easier later on when I am too busy to spend much time in the kitchen, and my boy loves him some spaghetti too! What do you like to cook in bul? I would love to hear some recipes. Gotta run and fix tonights dinner...chicken enchiladas. YUM!

Now I don't think I've ever cooked in the quantity that you are talking about...but anytime a recipe is easily doubled or tripled I do that. So many foods are better with a little time and it's wonderful to just pull it out of the freezer.

How lucky for you to be the recipient of those tomatoes in the middle of winter.

smells so good!!! I too make my sauce in big batches a freeze in smaller containers for later use, it comes in real handy when you're in a hurry for dinner. I'd like to pass along a tip I learned many years ago, you see we ahve a really large garden and usually at some poit all the tomatos come in at once, or so it seems. Even the neighbors after awhile run and hide if they see us coming with tomatos. Anyway if you gently rinse and core the tomatoes you can freeze them whole in freezer bags. When it's time to cook with them simply let the bag defrost slightly and the skins peel right off, then chop as needed. You can take out as few as one tomato to add to a recipe to entire bags full. I no longer blanche and peel, this is so much easier.

Yep, I do this. I started when I was teaching so I could come home thaw out an entree, toss a salad and add a baked potato havin' a meal in a jiffy. After retiring I've kept it up callin' myself the 'Freeze Queen!' It is just so much easier and we have very little food waste.

Oh man that sounds wonderful!!! I always buy my meat in bulk and freeze it cooked so I can pull it out of the freezer and throw it in whatever we are having for dinner (spaghetti, tacos, etc).

I am longing for spring too....haven't seen any blooming daffodils up here yet though.

I think we are cooking everything in bulk now that there are just the two of us! :-) All meals seem to last through four or five times without a 6'4" 20 year old boy!

Definitely sauce...it is so easy. I make Rachel Ray's Christmas pasta sauce, and freeze it. Then, lasagna. And, on and on.

Such a generous gift. How wonderful to have a freezer full of homemade goodness.

So many wonderful things you can do with spaghetti sauce.

Thanks for stopping by. I too am cooking up a storm lately. So nice to have fresh cooked food that I know what's in it.
