Yesterday I missed Mondays Menus, so I thought I would share a little plan ahead meal preparation that I did last week. While I was out of town a few weeks ago my sweet husband did a little cooking for himself, and needless to say I was impressed! He didn't quite get to the Lasagna he wanted to make so here's what I did when I got back home.
He had purchased this size Ricotta cheese. Actually enough to make 3 pans of Lasagna!

First I made this pan for our meal and some leftovers for later in the week.
Then I made this pan to freeze.
I also put together some stuffed shells with the Ricotta, spinach and grated cheese for another meal. I make a homemade spaghetti sauce from once a month cooking and it makes a lot of sauce! I had enough for these three meals and a couple of bags left for just plain spaghetti. I love it when I am running short on time and can pull something out of the freezer for dinner.
Tonight we will be having chicken salad with leftover baked chicken from Sunday's lunch. Now head on over to Jen's and see what else is cooking for Tasty Tuesday. Jackie

Loved your thrift store finds...white dishes were at the top of Christmas list this past year - and thanks to LNT going out of business....there were some great bargains to be had! They really are so versatile.

Hey Jackie! I just wanted to come over and answer your question about our adoption physicals. I think the main reason we have to have physicals is to make sure we aren't carrying anything communicative. (i.e. TB) and to make sure we are in reasonably good health. I hope that helps. YUUUMMY! I love lasagne with ricotta! That looks so good, and love the idea of making extra ones to freeze. I need to do that more often.

Just read your comment about my hot water heater. This is the second time that we've had a flood from a hot water heater bursting because it's rusted through. The first time that it happened the repairman told me that in order to be on the safe side, it's best to automatically get a new one every seven years. Well, guess what . . . this second disaster happened seven years from the last.
There's just no way you can tell when the doggone thing is rusting. This time I am going to get a pan for underneath so that at least if it does happen again, I'll be able to hopefully lessen the damage.
In the meantime, I have a note to myself in 2016 to change my water heater!! If mine weren't in such a bad place it wouldn't be so bad. But right in the middle of the house in a hall closet is a recipe for disaster!
(I also looked into a tankless hot water heater and while it would be great, I just can't afford it.)

As for my window treatments in my breakfast area...I just cut 2 pieces of fabric out, sewed them right sides together, left a few inches to turn them right side out, and ironed and used hem tape to adhere the raw edges. I tucked the raw edges inward, then added the hem tape and ironed. To hang, I just folded the top over, because I wanted to see the burlap, and clipped it on the ends and hung{temporarily} from upholstery tacks. That burlap was a beast, though, so if you use it lay the fabric over it, right side to the burlap and then cut. My burlap shifted and wasn't lining up. Boo...but I am pleased with how they came out. I think I posted about them in March. Maybe late February. Anyway, here's the book!!
