Delicious Blueberry Recipes

Today I am joining Tasty Tuesday and offering some recipes that we have enjoyed for years. My sister gave this recipe to me and I have definitely used this recipe often. I would compare it to a blueberry coffee cake.

Huckle Buckle Blueberry
1/4 C Soft Butter/Margarine 1/2 C milk
1 C Sugar divided 1 Tsp Vanilla
1 Egg 2 1/2 C Blueberries
1 2/3 C All Purpose Flour Divided 1/2 Tsp Ground Cinnamon
1 Tsp Baking Powder 1/4 C Butter/ Margarine
1/4 Tsp Salt
Cream butter; gradually add 1/2 c. sugar, beating well. Add egg; beat. Combine 1 1/3 C Flour, baking powder and salt; add to the creamed mixture alternately with milk, beginning and ending with the flour mixture, mixing well after each addition. Stir in vanilla. Pour batter into a greased 8 inch pan. Top w/ blueberries. Combine remaining 1/2 c sugar, remaining 1/3 C flour and cinnamon. Cut 1/4 butter into cinnamon mixture until mixture resembles coarse meal. Sprinkle over berries. Bake 375 degrees 45-50 minutes. Serves 6
Blueberry Bread Downtown Savannah Style
2 C Sifted Flour 2 Eggs
1 Tbs Baking Powder 3/4 C Milk
1/2 tsp Salt 1 C Blueberries
1/2 C Soft Butter 2 Tbs Light Brown Sugar
1/2 C Sugar 1/2 Tsp Cinnamon
  • Sift flour, baking powder & salt together
  • Beat butter, sugar, eggs in bowl until light & fluffy
  • Add dry ingredients alt w/milk-beat @ low speed after each addition until blended.
  • Fold in blueberries
  • Spoon into greased 8x8 inch pan
  • Sprinkle with the brown sugar and cinnamon
  • Bake @ 375 for 35 minutes

Mmmm, those recipes sound delicious! I found blueberries for a great price while grocery shopping yesterday so I'll have to try these out :) Thanks for sharing!
